Here’s a super-easy recipe I made-up today. (BTW- it is Mike-tested, Massimo-approved.)

Mike’s Mini Egg-White Omelets

You’ll need: mini-muffin tin, 1.5 cups egg whites (I use the Stop & Shop egg whites), 3 strips of Morningstar Farms veggie bacon (I suppose you could use real stuff), 2 non-fat cheese singles, nonstick cooking spray.

What to do: Preheat the oven to 400 degrees. Spray non-stick cooking spray into the cups on the muffin tin, divide the bacon and cheese evenly into the cups - 1/4 strip bacon and 1/6th of the cheese piece in each tin. Top with 1 tablespoon of egg whites. You can also add a little peppers, onions or spinach if you want. Do that AFTER the egg. Each muffin cup should only be about 3/4 full.

Bake for around 8 minutes. The mini omelets should slide right out of the pan. I top mine with a little sea salt.

Using the ingredients above; each mini omelet has 17 calories/.5g fat/.5g fiber. 4 omelets = 1 WW point.

I am working out a recipe utilizing larger muffin cups- look for it soon. =)

If I wanna eat it- I gotta tweet it.

Starting tomorrow I will be logging everything I eat by tweeting a photo. Follow my new twitter feed @CDX2 to see what happens.

Hopefully the pressure will help me stay on track with my new routine of eating healthier. Or maybe it will just end up being a lot of food porn. Either way- we’ll see what happens!

Dear “guy in the office who poops 4 times a day”; First- bravo. Clearly you get the daily recommended allowance of fiber. Secondly- there are 4 stalls. Thanks for always picking the one right next to the urinals. Ugh.

Every time I move to a new city I have the same issue: how do I find a new doctor? I have yet to find one good resource to help me narrow that search. Yes- there are lists, but I want reviews, credentials, etc. What am I missing? Do you have a resource for me?

I’m thinking of getting a weekend job. I don’t really need the money- I just want to do something where I get to meet more people and not use my brain too much. Maybe I will volunteer at a Museum or something. Anyone in the area got some ideas?
